La Bottega opened its doors in September 2021, and is a place to share an aperitif with friends having different Italian wines, Aperol and Campari spritz, pizza-al-taglio or fresh pasta made daily. Cantina Argentina opened its doors in October 2019. Is an Argentine restaurant that seeks to create a different space, with a relaxed and fun atmosphere. The restaurant offers exquisite food and drinks, including Argentine wine, in an atmosphere focused on enjoyment. This restaurant uses Argentinean grilling techniques, cooking only on the embers. Based on an underground and street style, Cantina is inspired by the 80 ́s, with a mix of retro video games, graffiti and of course, the Argentinean touch in all its style.

Amelia Hong Kong is one of chef Paulo Airaudo's restaurants in Hong Kong. It is located in Harbour City, the largest shopping center in the city. Bar Ibai is the traditional Basque gastronomy project that Paulo Airaudo recovers for the city of San Sebastián. It will relight its stoves, which were turned off in December 2020, in the spring of 2024. The Bar Ibai and its return is a very personal project of Paulo who was a regular customer since his arrival in the city to open Amelia restaurant, in 2017. The reopening is the personal commitment to give continuity to traditional and seasonal cuisine, selecting and purchasing the best raw materials daily in the local markets of San Martín and La Brecha. Therefore, the offer varies every day. Bar Ibai is the perfect place to eat vegetables, subjected to such a perfect treatment that it seems typical of modern cuisine.
