
NOI by Paulo Airaudo is a two Michelin Star restaurant located on the fifth floor of Four Seasons Hotel Hong Kong, overlooking Victoria Harbour. With seating for just 22 guests, the restaurant presents Paulo Airaudo’s contemporary interpretation of Italian cuisine through a season-driven tasting menu shaped by exceptional ingredients, technical precision, and a strong connection to the sea.
Noi - Italian for “we” - reflects a philosophy of shared experience, inviting guests to connect closely with Paulo Airaudo’s culinary vision. Rooted in high-quality seasonal ingredients sourced from artisanal producers, the cuisine honours Italian traditions while embracing contemporary technique and refined presentation. The tasting menu evolves throughout the year according to the seasons, with seafood playing a central role and many ingredients arriving daily from Japan. The restaurant is led by Head Chef Luigi Troiano, who works alongside Paulo Airaudo to bring the concept to life on a daily basis. Together, they combine a deep respect for product and tradition with a contemporary approach that balances creativity, precision, and flavour. An open kitchen sits at the heart of the restaurant, creating a direct connection between the team and guests. The space is divided between the intimate dining room and a more relaxed lounge and wine bar, both offering panoramic views across Victoria Harbour and contributing to a dining experience that is elegant, contemporary, and distinctly personal. Opened in 2022, NOI quickly established itself among Hong Kong’s leading dining destinations, earning its first Michelin Star in 2023 and a second in 2024. Today, it stands as one of the most acclaimed expressions of Paulo Airaudo’s culinary philosophy outside Europe.
